White Turkey Chili Recipe

Just in time for the cold winter months, this White Turkey Chili recipe is sure to keep you warm. I like this recipe because it’s simple to prepare in the morning, and when I come home at night dinner is ready to be served. Plus, you get the health benefits of some green leafy vegetables by adding the kale!

Serves: 4 – 6

Ingredients:

  • 1 Tbsp organic unrefined coconut or cold pressed extra virgin olive oil
  • 1 lb ground turkey (or chicken if preferred)
  • 2 Tbsp chili powder (I like to use Peruvian Chili Lime Seasoning for a little different flavor)
  • 1 tsp Himalayan sea salt
  • 1 tsp fresh black cracked pepper
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 large red onion, chopped
  • 2 Tbsp minced garlic (4-6 cloves depending on size)
  • 2 – 3 celery stalks, chopped
  • 4 – 6 green onions, chopped
  • 3 – 4 cups kale, chopped
  • 2 – 3 jalapeño pepper, minced (seeded if you do not want a lot of spiciness)
  • 2 cups turkey or chicken stock (I prefer stock over broth because of the flavor and nutrients)
  • 3 (15oz) cans of BPA-free white beans – Cannellini, Great Northern, or Navy (I like to use a can of each because they all are rich in different nutrients so why not get the most out of it)

Preparation:

  1. In a skillet on medium heat, add oil and slightly sauté red, green onions (leave the tops of green onions out), garlic and jalapeño pepper. Add the turkey, chili powder, salt, pepper, oregano, and parsley and brown meat. Then add a few ounces of the stock to the mixture and stir.
  2. Transfer content of skillet to a crock-pot on low heat and add the celery, the remaining stock and beans and simmer (I will typically leave on low for 2-3 hours).
  3. Add kale about 30 minutes before serving (It can be added earlier, but I like it to still have some crispiness to it).
  4. Divide into bowls and top with onion greens and sour cream if desired.
